Peanut Sprout Fritters

An alternative to your regular french fries. It is easy to make and everyone loves it.

Peanuts are an excellent source of many vitamins and minerals. These include biotin, copper, niacin, folate, manganese, vitamin E, thiamine, phosphorus, and magnesium.

Peanuts contain various plant compounds. These include antioxidants, such as coumaric acid and resveratrol, as well as antinutrients like phytic acid.

For a plant food, peanuts are an exceptionally good source of protein. Keep in mind that some people are allergic to peanut protein.

Ingredients
300-400 g Peanut Sprout
150 g Tempura Flour
200ml Iced Water
1/2 tsp Sweet Paprika Powder
1/2 tsp Garlic Powder
Vegetable Oil for frying

Instructions
  1. In a medium sized mixing bowl, whisk together tempura flour, water, paprika powder and garlic powder until smooth.⁣

  2. Rinse and cut off the roots of the Peanut Sprout.

  3. Pick up the sprout one at a time with chopsticks and dip in the tempura mixture, let excess mixture drip off then fry in hot oil until golden. To prevent the sprout from sticking together during frying, you can place them in the oil individually.

  4. When golden, place the Peanut Sprout on paper towel to let excess oil drip off.⁣

  5. Serve hot with your favourite sauce. 😍
